Wasted some time figuring out how to create folders within mail folders.
Client: Thunderbird, server: Dovecot, mailbox format: Mbox.
Solution: add a forward slash (/) to the parent folder name, e.g. projects/. Then you can create folders under the projects folder.

\ Sent
\ Trash
\ projects
\ new website
\ old website
\ ...
